After the flood, God allows for humans to eat plants, seeds, nuts, but also now they may eat animals and fish. This is a reminder that human life is of more value than the lives of animals.
God established a covenant with Noah and all mankind, swearing that He would never again send a world-wide flood. What was the symbol of that promise? A rainbow! So every time you see a rainbow you can be reminded of the promises of God and that He always keeps His promises.
